Preheat an oven @160C. Add egg, Sugar, Oil and Vanilla Essence to a large bowl and Beat until light and fluffy
2. Step
Sift in the dry ingredients to the wet ingredients and gently folding. [don’t over-mix ]

Add the Grated Carrots And mix well.
4. Step
Add some raisins or dried cranberries [Optional]
5. Step
Pour the batter into a 6 inch pan and bake in the oven for 60 minutes or until a skewer inserted in the middle comes out clear
