The most delicious vegetarian curry with tofu
This recipe is very simple, quick, tasty and healthy. Be sure to learn how to make vegetarian curry with tofu at home!
- 11⁄2 tablespoon curry powder
- 1 can coconut milk
- 2 cubes stock
- 2 carrots
- 1 broccoli
- 1 can of corn
- 2 zucchini
- olive oil
- 1 l water
In a saucepan, add olive oil. Add the carrot and broccoli and cook for 3 minutes,
Then add the oats and curry. Stir.
Add the water and broth. Cook for 10 minutes over high heat.
When the water boils, lower the heat and wait 10 more minutes. Add the mushrooms, string beans, courgettes and corn. Cook for 5 minutes.
Add the coconut milk, stir and wait until it comes to the boil again.
Add the fried and diced tofu. Stir.
Add the chilli and a further tablespoon of curry. Cook and stir.
Serve while hot.
