- 350 g pumpkin
- 1 yolk
- 125 g self-rising flour
Cut the peeled pumpkin into large cubes and bake until soft. Mix in the mashed potatoes.
Add salt and egg yolk to the mashed potatoes and mix well. Add the flour and knead the dough.
Stretch the dough into a thin rope and form the gnocchi.
You can boil immediately in salted water for 5 minutes or freeze. Gnocchi is usually eaten with sauce, tomato and cheese.
