Healthy and easy Halloween eyeball treats recipe
Looking for healthy options for Halloween treats? Here is an easy recipe with simple ingredients like pistachio, dates and white chocolate to make your Halloween extra special. The best part is you can store it for weeks!
- 1 Cup shelled pistachios
- 1⁄2 Cup softened dates
- 1 pinch salt
- 1 Cup white chocolates
- 1⁄4 Cup dried blueberries
- 2 tpsp red gel food colour
Toss the shelled pistachios, softened dates, and a pinch of salt into a blender. Stop the blender when you see a large truffle ball form.
Now take small portions of the pistachio paste and roll them into small balls. Repeat this step with the leftover pistachio paste.
Melt your white chocolate in the microwave or by using the double boiler method.
Once done, coat your pistachio balls completely in the white chocolate using a spoon.
Transfer the white chocolate-covered pistachio balls to a baking tray lined with parchment paper and let them cool in the refrigerator for 20 minutes. Repeat this step with other pistachio balls too.
To decorate the Halloween treats as eyeballs, place squished and dried blueberries on top of the treats to resemble an eyeball.
For the red spooky veins, use the red gel food colouring and a toothpick to draw details over the white chocolate balls. Let the treats set in the refrigerator for another 10 minutes, and the white chocolate and pistachio eyeballs are ready to serve!
