- 1 kg pumpkin
- 2 tablespoon oil
- 1 tablespoon oregano
- 1 teaspoon salt
- 1 teaspoon garlic powder
Peel the pumpkin. Cut into strips and dice.
Place the pumpkin in a large bowl with a tablespoon of oil, the oregano, salt and garlic powder and stir.
Place on a baking tray lined with baking paper or silicone.
Preheat the oven to 180º, place the tray inside and bake until it is soft when flattened with a fork.
Mash with a hand blender or puree.
Place on the presentation plate and add a little oil on top along with some croutons and parsley.
