- 1 lb white fish loin
- 1 Cup breadcrumbs
- 11⁄2 tsp paprika
- 1 teaspoon garlic powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground pepper
- 1 egg
- 1 tablespoon mayonnaise
- 2 tablespoon whole-wheat flour
In a frying pan over medium heat, add a splash of olive oil and 1 cup of panko. Mix and cook for 5 minutes.
Remove the browned panko from the heat and place it in a bowl.
Add the paprika powder, dried garlic, salt and pepper. Mix well and set aside.
In another bowl add the egg, mayonnaise, salt, pepper and flour. Mix well until smooth.
Take one of the fish fillets, dip it in the egg mixture until well coated and then dip it in the panko mixture covering the whole fillet.
Place all the fillets on a baking tray lined with baking paper and brush with a little oil.
