- 6 wheat or corn tortillas
- 2 chicken breast
- 1 paprika
- 1 green bell pepper
- 1 yellow bell pepper
- 1 onion
- lemon juice
- Chopped coriander
- grated cheese
- black pepper
- Chilli Powder
Heat a dash of oil in a frying pan over high heat. Add the chicken, cut into cubes and seasoned with salt and pepper, and sear well. Remove the chicken from the pan and set it aside on a plate.
In the same pan, add the onion and the red and yellow peppers. Cook for 5 minutes, stirring frequently. Add the green pepper. Cook for a further 10 minutes. Stir from time to time.
When the vegetables are soft, add the chicken again, along with any juices it may have released into the dish. Add chilli powder to taste and stir well. Cook for a further 5 minutes.
Heat the wheat or corn tortillas in a frying pan over medium heat.
Remove the tortillas and add a few spoonfuls of the chicken mixture. Top with some chopped coriander, a squeeze of lemon or lime juice and grated cheese. Close the fajita and serve immediately.
