Easy creamy pumpkin pasta recipe
Try this easy pumpkin pasta with mascarpone and parmesan cheese now at home! The silky pumpkin pasta sauce is delicious and healthy, perfect for Halloween lunch or dinner.
- 2 tablespoon olive oil
- 1 finely chopped onion
- 2 cloves mashed garlic
- 500 g pumpkin cubes
- 50 ml whole milk
- 2 tablespoon tomato puree
- 2 tablespoon mascarpone
- 350 g penne pasta
- 40 g parmesan
On a medium flame, heat the oil in a frying pan and add the onions with a pinch of salt. Fry them until translucent.
Add the garlic to the pan and fry till it turns golden.
Remove the pan from the heat and let it cool for 10 minutes.
In a container, boil the pumpkin cubes till tender and soft in water with a pinch of salt for 10-15 minutes.
When done, drain the water and make a pumpkin puree with the help of a hand blender.
Gradually add milk to the puree and keep blending it together. Then add fried onions to the puree and blitz all of it together.
Now, add the tomato puree to a frying pan and toss in the mascarpone cheese. Let it mix on low heat.
Add the pumpkin puree to the tomato puree and mix all of it well into a creamy sauce. Add more milk if required.
Meanwhile, boil the pasta in a container with a dash of olive oil and salt. When done, drain the pasta but save one cup of the pasta water.
Toss the pasta into the sauce and fold it into the creamy pumpkin sauce. Add the pasta water too.
Finally, top the pasta with parmesan cheese and season it with your favourite herbs.
