How to cook Easy Slow Cooked Beef

Ingredients
- 500 g beef chuck, trimmed of excess fat and cut into chunks
- olive oil
- 2 onions, sliced
- 4 cloves of garlic, minced
- 2 carrots, sliced
- 2 Stems celery, sliced
- 1 Cup beef broth
- 1 Cup red wine
- 2 tbls tomato paste
- 2 bay leaves
- 1 teaspoon thyme
- Salt and black pepper

Heat the olive oil in a skillet over heat. Season beef chunks with salt and black pepper, then sear them in the skillet along with garlic and onion. Move the meat to the slow cooker.
In the same skillet, add the carrots and celery and saute for 2 minutes.
Transfer the sauted vegetables to the slow cooker.
In a mixing bowl, combine the beef broth, red wine, tomato paste, thyme, and bay leaves. Pour the mixture into the slow cooker covering the beef and vegetables.
Cover slow cooker with a lid and set it to cook on low heat for 8 hours or until the beef becomes tender and easily falls apart.
Once cooked, remove the bay leaves from the slow cooker. Using a fork or tongs, shred the beef into smaller pieces.
Serve the slow-cooked beef hot, over a bed of mashed potatoes or alongside some roasted vegetables.
