Recipe for authentic garam masala at home
Garam masala is a mixture of dried spices originating in northern India. "Garam" means heat and "masala" means spice, but this combination is not overly spicy. Its name refers to the energetic nature of its ingredients, the yang of Asian culture.

 - 10 cardamom pods
 - 8 balls Jamaican pepper
 - 4 cloves cayenne peppers
 - 1 a piece star anise
 - 1 cinnamon stick
 - 1⁄4 nutmeg
 - 2 tablespoon cumin
 - 1 tablespoon coriander
 - 1 tablespoon ground black pepper
 - 1 teaspoon anise
 - 1 teaspoon sweet paprika
 - 1 teaspoon garlic powder

1. Step 
 Mix the grain ingredients

 Mix the powdered ingredients.
3. Step 
 Toast the grain ingredients in a hot frying pan without oil for about 3 minutes over medium heat, stirring continuously so that they do not burn.
4. Step 
 Mix in the food processor with the powdered ingredients and blend well until very fine.
5. Step 
 Store in a tightly closed jar for better preservation. It will keep fresh for 3 months.
