Preheat the oven to 180 degrees.

In a bowl, whisk the eggs with the sugar until foamy. If you want airier muffins, try to create as many bubbles as possible in the egg.

Add melted butter and blended bananas.

Add the flour mixed with baking powder and salt.

Finally, add the vanilla essence. The batter should be uniform, but be careful to leave it a little rough, the more fluffy the muffins will be.

Pour the batter into the prepared pans and bake for about 25 minutes.
