Begin by sifting the all-purpose flour, baking powder, and salt together into a large bowl.

In a separate bowl, beat the egg lightly and mix it with the ice cold water.

Once you see that most of the flour has been wet with the egg-water mixture, stop stirring. Over mixing will create a heavy batter which won't give you the light, crisp result you want from tempura.

The batter is now ready to be used. Coat your seafood or vegetables in the batter and fry until golden. Remember, the batter must be very cold while frying for the best results.
