Garlic Rosemary Oven Roasted Rack of Lamb

Ingredients
- 1 rack of lamb (about eight ribs)
- 4 cloves of garlic, minced
- 2 tbls of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- 2 tbls of Dijon Mustard
- 2 tbls of olive oil
- salt and black pepper to taste

Directions
Preheat your oven to 400°F (200°C).
While the oven is warming up, season the rack of lamb with salt and pepper on all sides.
In a bowl, combine the minced garlic, chopped rosemary, thyme, Dijon mustard, and olive oil.
Rub this mixture all over the rack of lamb, ensuring all areas are covered.
Place the lamb in a roasting pan, bone side down.
