Saltimbocca alla romana: the original Italian recipe

- 4 Pieces veal schnitzel
- 16 leaves of sage
- 160 g Parma ham
- 4 tablespoon butter
- 1 teaspoon olive oil
- 200 ml white wine
- black pepper
- 1 pinch sugar
Cut the veal cutlets thinly or place them between cling film.
Salt the veal cutlets and season with salt and a little pepper.
Then place 1 sage leaf and 1 slice of Parma ham on top of each schnitzel.
Heat the butter and olive oil in a frying pan and fry the veal escalopes with the Parma ham on the bottom. Turn after about 2 minutes and fry for another 1 minute.
Deglaze with white wine and reduce it. Add some cold butter to the sauce and stir. Don't let it boil.
Season the sauce with a little salt, pepper and sugar. Then, add the Saltimbocca to the sauce.
Serve Saltimbocca with salad, potatoes, risotto or pasta. Good appetite!
