Sugar-free homemade mint and lemon jelly recipe
You don't need to stop eating your favourite dessert! This homemade mint and lemon jelly recipe is tasty and healthy. Sugar-free and dairy-free, it's all you need!
- 250 g rice drink no sugar added
- 250 g organic apple juice
- lemon juice and zest
- 1 pinch salt
- 12 g kudzu or arrowroot
- 2 g agar
- peppermint leaves
- 2 tablespoon rice syrup
Place the rice drink, apple juice, agar-agar and mint leaves in a saucepan. Bring to boil for 8 minutes.
Strain to remove the mint leaves and return to the heat.
Dissolve the kudzu with 2 tbsp of apple juice and pour it into the saucepan. Let it boil for about 3 more minutes. Remove from the heat and add the lemon juice and rice syrup.
Serve in glasses and leave to cool. Garnish to taste and enjoy a wonderful dessert!
