The best and easy to make Broccoli soup without cream
In this recipe, classic cream is replaced by coconut milk. Thanks to it, the soup is very fresh.
- 1 broccoli
- 1 larger potato
- 1 red onion
- 1 clove garlic
- 100 ml coconut milk
- 2 tablespoon olive oil
- black ground pepper
- 1 bay leaf
Heat olive oil in a pot and quickly fry chopped garlic on it. When it's a little brown, add the diced onion and sauté. We will also add a bay leaf.
We clean the potatoes, cut them into pieces and add them to the onion base. Cut the broccoli into roses and add as well. We'll fry for a while. Salt and season. We cover with water.
Cook the soup until the broccoli and potatoes are soft. We take the bay leaf and mix the soup until smooth with an immersion mixer.
In the end, we only supply coconut milk and mix well. If necessary, we add salt and root.
