The fluffiest and most delicious chocolate chip muffins

- 240 ml milk
- 15 ml apple cider vinegar
- 65 g natural yoghurt
- 320 g Wheat flour
- 250 g chocolate chips
- 1⁄2 teaspoon salt
- 200 g sugar
- 21⁄2 teaspoon baking soda
- 110 g unsalted butter
- 2 tablespoon sunflower oil
- 2 teaspoon vanilla essence
- 2 egg
Pour the apple cider vinegar into the milk. Mix and set aside.
In a bowl, add the flour together with the sugar, baking powder, baking soda, salt and chocolate chips. Mix well and set aside.
In a larger bowl, put the eggs together with the yoghurt and mix until they have a smooth texture.
Add the vanilla essence, honey and sunflower oil. Whisk together.
Add the melted butter and the mixture from the first step.
Add the dry ingredients to the mixture and mix until the ingredients are combined.
Cover with cling film and leave to rise for one hour.
Spoon the batter into muffin tins. Sprinkle the remaining chocolate chips and a little sugar on top.
Bake in the oven at 220° C for 6 minutes and then at 170° C for 7 more minutes.
Leave to stand for 10 minutes and transfer to a wire rack to cool. Enjoy the best chocolate chip muffins ever!
