Traditional Mexican huevos rancheros recipe
Huevos rancheros are one of the most traditional Mexican breakfasts. This recipe is quick, easy and delicious.
- 2 corn Tortillas
- 4 egg
- 1 green bell pepper
- 1 red onion
- 1 tomato
- 2 tablespoon fried tomato
- garlic powder
- ground cumin
Chop the onion, green pepper, chilli and red pepper. Then, chop the tomato.
Put a frying pan on low heat with a splash of oil. Add the chopped vegetables and a pinch of salt. Cook over medium heat for 10 minutes.
Add the garlic powder, cumin, tabasco to taste and fried tomato. Stir and cook for a further 5 minutes.
Heat olive oil in a frying pan. Then, add the eggs and fry them.
Remove the eggs from the pan with a spatula and place one egg on top of each corn tortilla. Season with salt.
Add the vegetable frittata on top of the eggs.
Serve the huevos rancheros and garnish with a sprig of fresh coriander. You can accompany the dish with some black beans.
