Directions
Preheat your oven to 350°F (175°C). Line a cupcake pan with liners and place an Oreo cookie in the bottom of each liner.
In a large bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the eggs, milk, oil, and vanilla extract. Then, gradually add our dry ingredients and mix until smooth.
Pour the batter into the cupcake liners on top of the Oreos, filling each about 3/4 full.
Bake for 18-20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Let them cool before frosting.
For the frosting: Beat the softened unsalted butter until light and creamy. Then gradually add in the powdered sugar, a little salt, vanilla extract, and enough milk or heavy cream to get a nice consistency.
Crush about 6 Oreos (or as many as you prefer) and fold into the frosting.
Once the cupcakes are cooled, frost them with the Oreo cream cheese frosting. Top with mini Oreos if desired.
