 - 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
- 1 onion
- 3 cloves garlic, minced
- 2 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1⁄2 teaspoon ginger powder
- 1⁄2 teaspoon cinnamon
- 1 can diced tomatoes
- 1 Cup chicken broth
- 1 Cup coconut milk
- salt and pepper
- fresh cilantro for garnish

1. Step 
  In a slow cooker, add the chicken, onion, and garlic.
2. Step 
  In a separate bowl, mix together the curry powder, cumin, coriander, turmeric, paprika, ginger, and cinnamon. Add this mixture to the slow cooker and toss to coat the chicken evenly.
3. Step 
  Pour in the diced tomatoes, chicken broth and milk. Stir well.
4. Step 
  Cover the slow cooker and cook on low for 7-8 hours or on high for 3-4 hours.
5. Step 
  Season with salt and pepper to taste.
6. Step 
  Serve the chicken curry on a bed of rice or with naan bread. Garnish with fresh cilantro.
