Directions
In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch square baking dish to form the crust.
In another bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and egg yolks until well combined. Pour the lemon filling over the crust and spread it evenly.
Place the baking dish in the refrigerator and let it chill for at least 1 hour or until set.
Meanwhile, in a chilled mixing bowl, whip the heavy cream until soft peaks start to form. Add powdered sugar and vanilla extract, and continue to whip until firm peaks form.
Once the lemon filling is set, spread the whipped cream over the top and smooth out with a spatula. Sprinkle lemon zest on top for an extra burst of flavor and garnish (if desired).
Cover baking dish and refrigerate for another 2-3 hours, to allow the flavors to meld together and the slice to firm up.
When ready to serve, cut the lemon slice into squares and transfer them to a serving platter.
