Homemade pastry for quiche recipe

- 200 g self-rising flour
- 150 g butter
- 1 yolk
- cold water
Mix the flour with a pinch of salt, make a small mound and in the middle make a hole. Then, place there the butter in small pieces. Mix it all, little by little, with your fingertips until it forms a kind of coarse sand.
Make a cavity again. Add the egg yolk and a little ice water.
Slowly add water and gradually make the dough into a ball until it is uniform and mouldable. Wrap it in cling film and chill for at least 30 minutes.
Take it out of the cold and spread it on a well-floured surface and it's ready to use!
